The most authentic Kauai Luau with the best dancing is definitely at Coconut Beach. The Coconut Beach Resort does an exceptional job under torchlight with the traditional lei greeting, Imu ceremony and a wonderful hula show choreographed along the track of history by acclaimed Hula Master Kawaikapuokalani Hewett that focuses on the island of Kauai.

There's the usual all-you-can each buffet with rather standard dishes prepared so you'll probably eat too much. The all-night open bar suggests a designated driver if you aren't staying on the premises. Luaus, it should be noted, are a bit like cruise ships. Everyone eats too much and complains about it while reaching for another piece of Kalua pig.
